Brazilian Shrimp Stew
Saute one chopped onion and one diced bell pepper in some olive oil. Add a
small can of peeled tomatoes and their juice, stir, and simmer for a a few 
minutes. Throw in a pinch each of cayenne and fresh cilantro, and salt and
pepper to taste
Simmer for a few more minutes, then add 240ml of unsweetened coconut milk.
Stir and simmer for a few more minutes, then add some minced garlic and as
much peeled and deveined shrimp as you want to eat. 
Since this is a stew, you might prefer the cheap baby shrimp which come 
ready to cook and don't need cleaning. you can throw 454g -680gof them in
and have plenty of sauce. Cook until your shrimp are cooked through and the 
stew starts to thicken, about another 15 minutes. 
Serve over steamed rice. Garnish with chopped peanuts or toasted coconut.
