Sweet Potato Crescent Rolls

Ingredients

-   1 pack pastry dough
-   4 oz mushrooms, finely chopped
-   0.5 white onion, finely chopped
-   0.5 tsp salt
-   0.5 tbsp butter, melted
-   Sweet Potato Mixture:
    -   2 medium sweet potatoes, baked
    -   1 tbsp butter
    -   2 tbsp soy milk
    -   0.5 tbsp maple syrup
    -   1 tsp chilli powder
    -   0.5 tsp salt

Method

1.  Preheat oven to 375 F
2.  Bake sweet potatoes until cooked through
3.  Add mushrooms and onions to large skillet on medium heat
4.  Cook for 6-8 minutes or until softened
5.  Remove from heat and set aside
6.  Combine sweet potato mixture in bowl, mash until combined and
    creamy
7.  Roll out pastry dough into 8 equal triangles
8.  Spoon 2 tbsp of sweet potato mixture onto large end of pastry
9.  Add 1 tbsp mushroom and onion mixture to sweet potato mixture
10. Roll up pastry dough, starting at large end and finishing at
    point
11. Place on greased baking sheet
12. Brush with melted butter
13. Bake for 12 minutes or until browning on top
