Stuffing Rolls

Ingredients

-   3 tbsp butter
-   228 g sausage or other meat
-   1 small onion, finely chopped
-   1 stalk celery, finely chopped
-   4 garlic cloves, minced
-   0.25 cup sage leaves, minced
-   0.25 cup parsley, minced
-   455 g pizza dough
-   2 tbsp olive oil
-   Salt
-   Black pepper

Method

1.  Melt 2 tbsp butter in frying pan
2.  Add sausage, break up into small pieces
3.  Cook until brown
4.  Add onions, celery, garlic, sage, cook stirring frequently until
    vegetables softened, ~10 minutes
5.  Add parsley and season to taste with salt and black pepper
6.  Transfer to bowl and let cool
7.  Make knots of bread dough and place into the bowl with the meat
    mixture
8.  Toss and fold with hands until thoroughly coated
9.  Grease casserole dish with 1 tbsp butter
10. Transfer all to dish
11. Drizzle with oil
12. cover with cling film
13. Set aside until doubled in size, ~4 hours
14. Preheat oven to 180C
15. Bake 25-30 minutes
