Cheesy beer bread rolls

Ingredients

-   815 g strong white flour
-   1 tbsp dried yeast
-   2 tsp salt
-   4 tbsp (55 g) butter
-   60 ml honey
-   480 ml pale ale beer
-   200 g sharp grated cheddar

Method

1.  Combine the flour, yeast, salt, 2 tbsp butter
2.  Rub in the butter
3.  Add the honey and beer
4.  mix until thoroughly combined
5.  Add 120 g cheese, mix until combined
6.  Lightly grease a bowl and let dough rise for ~1 hour
7.  Lightly grease a baking pan
8.  Divide the dough into 12 pieces and form into balls
9.  Place balls side by side in pan. Don’t worry if they don’t touch
    each other yet, they will rise to fill the gaps
10. Cover the pan and rise for 35-45 minutes until puffy
11. Heat oven to 180C
12. Brush rolls with 2 tbsp melted butter and top with remaining
    cheddar
13. Bake until golden brown, ~17-22 minutes. Let cool at least 10
    minutes before serving
