Stewed Rhubarb

Ingredients

-   750 g rhubarb, chopped into 2 cm pieces
-   Juice and zest of 1 orange
-   110 g sugar
-   2 thumbs of ginger, shaved
-   1 tsp vanilla extract
-   250 ml yoghurt
-   1 tbsp golden syrup

Method

1.  Place rhubarb, orange juice, orange zest, sugar, 2 tbsp water,
    ginger in a pan
2.  Boil then reduce heat and simmer for 5 minutes or until rhubarb
    is soft
3.  Mix in vanilla extract, yoghurt, golden syrup
4.  Serve warm with yoghurt
