Spinach Pizzetta

Ingredients

-   Handful spinach
-   1 tbsp creme fraiche
-   1/4 clove garlic, minced
-   Small handful shaved parmesan
-   Salt
-   Black pepper
-   Golf-ball of pizza dough
-   1 egg

Method

1.  Preheat oven to 220C
2.  Put baking sheet in oven to heat
3.  Blanch Spinach in boiling water
4.  Drain and finely chop spinach
5.  Add creme fraiche, garlic, parmesan, salt and pepper
6.  Mix to form a paste
7.  Roll out dough to about 8 inches diameter
8.  Evenly spread spinach paste over base
9.  Make a well in the middle, add egg
10. Bake for 6-8 minutes
