Raw Vegan Tortilla Filling

Ingredients

-   Romaine lettuce leaves, washed and shredded
-   Corn Tortillas or flatbreads

Taco Nut Meat

-   2 cups raw walnuts
-   1.5 cups sun dried tomatoes in oil
-   2 cloves garlic
-   1.5 tsp cumin
-   1 tsp mesquite powder
-   0.25 tsp chipotle chili powder
-   0.25 tsp cayenne pepper
-   0.5 tsp salt

Cashew Sour Cream

-   0.5 cups cashews, soaked
-   0.33 cups water
-   0.5 tsp lemon juice
-   0.5 tsp apple cider vinegar
-   0.75 tsp nutritional yeast
-   0.25 tsp salt

Guacamole

-   2 avocados
-   1 tbsp lemon juice
-   0.33 cups coriander, chopped
-   0.5 tsp garlic powder
-   0.5 tsp cayenne pepper
-   0.5 tsp salt

Pico de Gallo

-   4 tomatoes, diced
-   0.5 red onion, diced
-   4 green onions, diced
-   0.25 cup coriander, chopped
-   1 tbsp lime juice
-   0.25 tsp salt

Method

Taco Nut Meat

1.  Combine all ingredients in food processor and pulse until a
    chunky consistency

Cashew Sour Cream

1.  Combine all ingredients in high speed food processor and blend
    until smooth

Guacamole

1.  Combine all ingredients in food processor and blend until smooth,
    or pulse until chunky

Pico de Gallo

1.  Combine all ingredients in bowl
