Pasta with vodka and sausage

Ingredients

-   1 tbsp olive oil
-   3 cloves garlic, minced
-   1 shallot, minced
-   8 oz sausage
-   1 cup vodka
-   2 cups stock
-   1 can chopped tomatoes
-   1 lb penne pasta
-   3/4 cup heavy cream
-   1/4 tsp red pepper flakes
-   1/4 tsp dried oregano
-   Salt
-   Black pepper
-   Small handful fresh basil
-   Shaved parmesan

Method

-   Heat olive oil in large pan over medium-high heat
-   Add garlic and shallot, cook until fragrant, ~1 minute
-   Crumble sausage into pan and brown
-   Add vodka and cook for about 2 minutes
-   Add stock and tomatoes and bring to a boil
-   Add pasta and cook, stirring often
-   Add cream, red pepper flakes, salt, pepper, basil
-   Cook for 5 minutes until warmed through
-   Top with parmesan
