Hasselback potatoes

Ingredients

-   4 baking potatoes
-   2 tbsp butter, melted
-   Salt
-   Black pepper
-   2 tbsp parmesan

Method

1.  Preheat oven to 220C
2.  Insert skewer along bottom of potato to act as stopper for knife
3.  Slice vertically down the potato, about 3-6 mm apart
4.  Remove skewer
5.  Place on baking tray and drizzle with butter and season with salt
    and pepper
6.  Bake for 35-40 minutes or until browned and crisp
