Elderberry Pie

Ingredients

Filling

-   3.5 cups elderberries
-   1 cup sugar
-   0.25 tsp salt
-   2 tbsp cornstarch or tapioca
-   1 tbsp lemon juice
-   1 tbsp butter

Pastry

-   275 g plain flour
-   110 g butter
-   80 g sugar
-   1 egg
-   Milk

Method

Pastry

1.  Crumb together butter and flour
2.  Add sugar
3.  Mix in egg and enough milk to form soft dough
4.  Roll into ball, refrigerate for 30 minutes
5.  Roll out and line pie dish, set some aside for lid

Filling

1.  Mix filling ingredients and simmer to dissolve sugar
2.  Pour filling into pie shell
3.  Cut vents in lid
4.  Bake at 200C for 40-45 minutes
5.  Serve warm with cream
