Bean and Cheese Taquitos

Ingredients

-   1 cup black beans, rinsed, not dried
-   0.5 cups grated cheddar
-   Salt
-   8 Corn tortillas
-   0.75 cups olive oil
-   0.5 cup tomato salsa
-   0.25 cup sour cream

Method

1.  Gently mash black beans with the cheddar and salt
2.  Divide evenly between tortillas
3.  Roll tortillas up
4.  Heat oil in pan on medium-high heat
5.  Fry tortillas in batches until crisp, 2-3 minutes
6.  Serve with salsa and sour cream
