Olive Oil Cake

Ingredients

3 large eggs (150 grams)

¾ cup (150 grams) granulated sugar

½ cup (110 grams) extra-virgin olive oil

½ cup (120 grams) whole milk

1½ cups (190 grams) all-purpose flour

1 teaspoons (5 grams) baking powder

½ teaspoon (1.5 grams) kosher salt

Preheat oven to 350 -ish

Mix eggs, milk and olive oil. Just whip them together. There is an option to get fancy with the egg whites, but this is basically a pound cake and should be appropriately dense.

Mix together all powders. Sift or sprinkle onto wet ingredients. Combine.

Put a clean, oiled cast iron skillet over medium heat for a while. When it's hot liberally apply some sugar (i like brown). Once the sugar melts and gets caramely in the bottom of the pan, quickly scrape in the batter and put in the oven.

Cook for like half an hour, 35 minutes. Do the toothpick thing.

First attempt, 10 08 2019. Didn’t use any of the extracts called for, added about a teaspoon of lemon zest, turned the baking powder down to 5.3 grams because jeesh sodium! Cooked in cast iron at 400 preheat - 450 initial - 350 final total 25 minutes.

Spring 2020. Used a load pan. Surface area to volume ratio wasn't as tasty. Needed less heat for more time. 
Next time i want to use this as a base for individual chili-powder informed pineapple upside down cakes.
