Potato Soup

Ingredients

12 Yukon gold potatoes, skinned and cubed
4 celery ribs, chopped
2 leek leaves, chopped
1 cup (approx.--this will depend on the desired consistency of the soup)
   of chicken stock
3 green onions, chopped
1 cup (approx.--this will depend on the desired consistency of the soup)
   1/2-and-1/2 and/or milk
1/4 Tsp (pinch) nutmeg (to taste---it brings out other flavours; if you
   can taste it, then there is too much)
Salt and pepper (to taste)

Instructions
------------

1) Boil the potatoes and celery in a pot of water until the potatoes can
   be easily pierced with a fork.

2) Depending on the desired consistency of the soup, drain as much, or
   little, water from the pot as is necessary. Next, take an immersion
   blender, and purée the potatoes and celery.

3) Add the chicken stock, 1/2-and-1/2, and/or milk (the quantities of
   which will depend on the desired consistency of the soup), a pinch of
   nutmeg, salt, and pepper; stir the contents.

4) Add the leeks and green onions, and stir.
