Conclusion: go for a Ryzen 5600X.
That is, get a 5th-gen Ryzen 5 5600X.
That is, get the latest version of the Ryzen 5.

Ryzen 7, 9, and obviously Threadripper are overkill.
They're for heavy professional computing and intense
number crunching (I imagine protein folding and stuff).

Ryzen 5 with a good discrete graphics card will run VR
and "AAA" games well. Next I have to research graphics
cards. Without a discrete GPU the Ryzen 7 4750G looks
good.

Ryzen 3 is utterly pointless. Waste of resources to
manufacture that chip. If you save up for a 3, just save
a little more and get a 5.

I don't get any thrill out of running around killing other
people, but there are a handful of other games. Any racing
game. I have F1 2019 and DiRT Rally 2.0 on Steam but can't
really play them with my current hardware. I bought them
with the idea that I'll get good hardware soon, now that
I have a job that pays and my credit card debt is just about
gone (1000$ to go!) I'm also looking into "Dyson Sphere Project"
and some other-world exploration games like "Earth Analog".
I think the other one I found is called "Exo One". Neither
are fully developed yet.

I also have what are called "walking simulators" by "caves rd"
on Steam. I think his name is Matthew Henneman or something.
They're fairly stunning photorealistic 3D environments.
A good "starter kit" for a VR headset.

I also have "Star Wars Squadrons". I'm generally getting tired
of all the violence, but I'll make the occasional exception. It's
Star Wars.
