Filling recipe:
 2 cups mashed sweet potatoes
 1/2 cup sugar
 1/3 cup packed light brown sugar
 1 teaspoon ground cinnamon
1/2 teaspoon nutmeg 
 1/2 teaspoon salt
1 tablespoons vanilla 
4 oz. melted butter

In a large mixing bowl Add the mashed sweet potatoes,  butter , vanilla both sugars, cinnamon, mix to combine, 

cut out pie dough(or biscuit dough) in circle and brush with egg wash
place filling in middle of dough
fold over and prick edges with fork
fry on low to medium oil until golden brown on each side
sprinkle with cinnamon sugar while still hot from oil
