1 pound package lentils; 4 to 6 slices bacon, diced; 2 small onions, sliced; 2 medium carrots, diced; 1 cup diced celery; 1 large raw potato, peeled and grated; 2 1/2 to 3 teaspoons salt; 1/2 teaspoon pepper; 1 beef shank; 2 quarts water, more if needed Soak lentils overnight. Drain. Add other ingredients and simmer for 2 hours, stirring occasionally. Freezes well. Serves 10 to 12
