Roasted Pork "Hunter Style"

You need for 4 servings:

- about 1 kg of pork
- mushrooms (canned is fine, fresh is better)
- 4 medium sized onions
- 1 apple
- Salt, pepper, mustard, nutmeg, paprika powder, flour
- A big pan, a big pot (its going into the baking oven, so NO
  PLASTIC!), a roasting-thermometer, a smaller pot, a whisk


First you wash the pork with salt and vinegar (i was told it is not
neccessary from a hygiene standpoint, but i stick with what i have
grown up with), while a big pan with a liberal amount of fat is
heating up on the stove. Season the pork with salt and pepper from
every side, cut the onions and the apple in small pieces.

Let your baking oven preheat to about 250 degrees Celsius.

When the stove is hot enough and the fat is sizzling put the pork into
the pan and fry it from every side so it gets a nice crunchy
crust. After this is done, remove the pork and put the onion and apple
pieces into the pan and fry them until they are nearing a gold-brown
state.

Now apply mustard and paprika powder on the outside of the pork and
put it together with the fried onions, apple pieces and mushrooms into
the big pot. Close the lid and put it into the baking oven for at
least an hour. While everything is "baking" you can prepare the side
dishes (dumplings and red cabbage are a good choice).

When about an hour is gone check the state of your pork with the
roasting-thermometer. If its core temperature is about 85 degrees
Celsius you can be pretty sure its done and not dry.

Now pour the liquid that has accumulated into the smaller pot, add
water (for 4 servings about 300 ml) and get it boiling, whisk flour
into it until it gets to the thickness you want with your sauce. Taste
it and season it with nutmeg, paprika powder, salt and pepper until
you reach a point where you are statisfied.

Now cut the pork and serve with the mushrooms and your side dishes.
