Japanese Vegetarian Mabo Dofu ( Mapo Tofu )

Ingredients

1 Tbsp. sesame oil
1/2 onion
Shitake mushrooms
1 Tbsp. hot bean paste ( Gochujang )
2 Tbsp. red miso paste
3 Tbsp. rice cooking wine
1 cup dashi stock
1/2 cup mirin
Drained silkin tofu
1 Tbsp. soy sauce
1/2 Tbsp. freshly ground black peppercorns
1/2 Tbsp. freshly ground pink peppercorns
1/2 Tbsp. freshly ground green peppercorns

For the slurry
1/2 Tbsp. potato starch
1 Tbsp. water
1 Tsp. seasame oil

For garnish
La-Yu ( chili oil ), hot seseme seed oil & Nanami Togarashi ( chili pepper powder ) to taste
1 or 2 minced green onions
