Yesterday was my 57th birthday.  We celebrated the day by smoking a
3.8kg port butt.  My 25 year old son has come home after moving out a
couple of years ago - to save up some money to start his own business.

Anyway, one of the guys he was sharing a house with was a butcher and
had a smoker.  He didn't have anywhere to put it when they moved out
so it ended up at my house.  Since then I have being dabbling in
smoking various types of meat.  We have discovered that there is no
type of meat that does not taste delicious when slow cooked in the
smoker.

The only downside is that it takes ages to cook a 3.8kg pork butt - 14
hours. That meant that someone had to get up at 4am to put the meat
on.  My son volunteered to do that as he has a somewhat nocturnal
lifesyle on the weekend.  I took the pork out at 6pm and let it rest
until 7pm, then pulled it apart.  It was done perfectly - easy to pull
and quite moist.  And it tasted absolutely delicious with some Baby
Ray's BBQ sauce!
