Veggies
so far) are excellent, especially for soups.

Speaking of veggie soups, my favorite is Gaspacho (sp?) a cold, spicy vegatable
soup I make several times every summer when fresh veggies are plentiful.

Base:
	2 large cans tomato juice
	1 quart cider vinegar

Add FRESH veggies of all sorts, to include:
	4-6 tomatoes
	2-3 large onions
	the kernals from 2-4 cobs of corn
	2 green peppers
	1-2 cucumbers
	4 stalks celery
	1 bunch cut spinach
	1 potato

	Plus anything and everything (experiment!).

Add hot stuff to taste.  I try to use fresh hot peppers, but a lot of
Tobasco sauce will work in a pinch.

Marinate at least 24 hours in the fridge.  It will continue to thicken
for a few days, and is still delicious a week later.

Notes:
I am a free-style cook, so the recipe is an approximation of what I
make.  Try any fresh veggies available to you -- I haven't been
disappointed yet.

An interesting thing happens if you make the soup too hot: when you stop
eating it your mouth heats up.  If you start eating it again, the coolness
of the soup is soothing.  The net effect is a soup you can't stop eating!
