Fresh pasta can also be easily made by hand (without a $50 machine). Just
use any recipe for pasta dough, roll out with a roller as if you were
making a pie crust, then roll up the sheet (like a jelly roll) and start
slicing off the pasta to whatever thickness you want.  Pasta made this
way tends not to be as uniform in shape as with a machine, but tastes just
as good.

As with machine-made pasta, you need to flour liberally to prevent the
dough from sticking.

The whole process is very quick.
