Scottish Oat Cakes 1/2c old fashioned or instant oats 2T butter 2T - 1/4c cold water 1/2t salt 1/2t onion powder 1/4t garlic powder 1T dried chives 1/2t dried sage 1/4t black pepper pinch cayenne 1. Melt butter. 2. Mix oats, salt, and seasonings in a bowl. 3. Pour melted butter over dry mix and stir to thoroughly coat. 4. Add enough cold water, mixing, to create a moist but not-too-wet dough. 5. Let dough stand in bowl while heating griddle over medium-medium-low heat. 6. Spoon about 2T of mixture onto griddle flattening into a cake or patty. 7. Cook 10-15 minutes until top begins to appear dry. Turn and cook about 10-15 minutes on second side until brown or desired doneness is reached. 8. Remove to a cooling rack and serve with butter, hummus, syrup, honey, cheese, or enjoy plain. This recipe really comes together well using instant oats. Old fashioned produces a rougher texture and the oats will take longer to hydrate in step 5. Experiment with different fats in place of butter. Traditional preparations used bacon fat or lard. I've not tried coconut oil or olive oil; could be delicious. Experiment with different spice blends to your taste. This can also be prepared by pressing the entire dough into a cast iron skillet to form a large cake. Allow to brown on the stove for 10 minutes, then transfer to a pre-heated 350F oven for 20-25 minutes or until cooked through. September 2019 Tom Canich <tom@canich.net>
