1 # Ful Mudammas

3 This smoooshy meal of spiced up fava beans is delightful as a breakfast
4 or brunch, but you can have it anytime you need a simple filling one-pot
5 dish. It's an exceptional marriage of taste and ease--it comes together
6 in a pinch with staples you might have on hand. And its longevity in your
7 diet is ensured by its potential for customization--when you get bored
8 of the base flavors add in hot peppers, tomatoes, tahini, or _________
9 to make it exciting again.

11 ## Ingredients
12 - 1 can of fava beans
13 - 1 teaspoon of cumin (use toasted cumin if you have it)
14 - 1 large garlic clove
15 - 1 cup of water
16 - 1 cup of loose parsley
17 - 1/2 teaspoon of cayenne
18 - 1/4 teaspoon of salt
19 - 1/2 lemon, juiced/squeezed
20 - 5 tablespoons of EVOO

27 ## Directions
28 Drain the fava beans. Place into a large pan, pot, or skillet. There
29 should be enough room so the beans are arranged in one layer. (This recipe
30 was tested with 12" cast iron pan.) Add the water, cumin, cayenne, and
31 salt. Then turn the heat up enough to maintain a simmer. Cook the beans
32 until they start to split and the water is reduced by half.

34 Meanwhile, finely chop the parlsey. Then smush it using a mortle and
35 pestle, cutting board and cyllandrical object, or some other ingenius
36 smushing method. The parsley should bruise, becoming fragrant and dark
37 green. Next, mince and crush the garlic. Smush it together with the
38 parsley, then set both aside.

40 Once the fava beans are done cooking, gently smush them with a wooden
41 spoon or masher. Break them down to a texture you think you'll enjoy. I
42 like it chunky, so lots of full beans remain. Now add the EVOO and
43 lemon. Gently stir. Taste the mixture for a final seasonings (does it
44 need salt?). Add the parsley and garlic. Gently stir once more then serve.
